My husband’s favorite cookie was coconut chocolate chip. I decided to give this cookie the good old gluten free try! It was my intention to make a flour mixture however I decided to just go ahead and try coconut flour alone. My goodness, that flour smells so amazing! We were rewarded with a really good cookie.
1 stick butter
1/3 cup brown sugar
2 tbsp sugar
1 tsp vanilla
2.8 oz coconut flour
1/2 tsp baking powder
1/4 tsp baking soda
1/2 cup coconut (I used Baker’s Angel Flake Sweetened, very fresh and moist)
1 cup choc chips
Preheat the oven to 350.
In a mixing bowl combine butter, brown sugar, granulated sugar, egg and vanilla. Cream well until thoroughly combined then add the flour, baking powder and baking soda.
Beat these in and add the coconut and the chocolate chips. Mix until combined.
I like to buy several different sizes of ice cream scoops for cookie making. Use a small scoop, about two tablespoons, and scoop the dough onto a parchment lined cookie sheet. Press them down a bit with your fingers or a fork so they won’t be round.
This recipe made 16 cookies for me. Bake in preheated oven for 12 minutes and cool completely before serving.
