If you’re not from Texas you may not know about Rudy’s. They say they have the “Worst Barbecue” in Texas. Actually it is awesome. And they make this really amazing creamed corn side dish that will have you clamoring for more! Now bear in mind, I hate creamed corn. The canned version. But I adore Rudy’s creamed corn.
So whether you are a tried and true Rudy’s fan or not, this is an excellent dish to try. This is my version of their recipe.
10 oz frozen corn
1 tbsp butter
½ cup cream
½ cup milk
2 tbsp fresh Parmesan cheese
2 tsp sugar
1 tbsp cornstarch
Put butter, corn, cream, sugar, salt and pepper in pan on medium heat. Bring that to a boil.
Mix cornstarch with milk and stir into the corn mixture.
Cook until thickened, 1 to 2 minutes. Easy breezy and your friends and family will rave for more!
