Italian Cream Cake

Italian Cream Cake is an amazingly delectable cake filled with coconut and pecans and frosted with yummy cream cheese frosting.

2 sticks butter
2 cups sugar
5 eggs, separated
11 ounces my gluten free flour mix
small can flaked coconut (1 cup pressed when measured)
1 cup buttermilk
1 tsp vanilla
1 tsp baking soda
1 cup chopped pecans

16 oz cream cheese
2 lb confectioner’s sugar
1 stick butter
2 tsp vanilla
